Yeah, it's not halibut though, it's called solefish or flounder, we have a couple tropical species.

Alot of old timers grew up with it and so their children also acquired a taste for it.
Lot's of large dead tarpon on that group.

^ quite true
i remember seeing my father and his brothers bringing home a couple that they had to use a small garden hoe to pluck off the scales ( in the 90's we talking)
it was a cheap fish, sometimes given away so when they brought home a 100 pounder and share it up amongst 3-4 of them it was fish in every way for a week

Its an acquired taste, has some oily spots near the skin that if it hits you by surprise you could gag. The meat itself is alot tougher than other fish and the skin is thick. I like it though.... real lash bbq or fry.

Tarpon recipe. :|

1 Tarpon about 80 pounds.
1 plank the length of the fish...preferrably a soft wood like pine. Hard wood ( like oak) makes for tougher eating.
Olive oil, salt, pepper and paprika to taste.

Directions:

Pre-season the Plank with the ingredients listed above making sure to coat it all evenly.
Place the Tarpon on the plank. Wrap the Tarpon and plank in aluminum foil.
Place it on the coals.
Allow to cook for 45 minutes.
After 45 minutes remove the foil and toss Tarpon in the trash.
Plank serves up to 10 people.

Not disagreeing but the same arguments are made about game fish in other parts of the world. Hence size, bag, season limits on key species in developed countries 2 prevent over fishing and preserve the fishery.

Do we have any idea how much revenue iz brought in by our local tarpon fishery? ive not seen any stats.

Where you living lol? No one is conducting research or collecting data to show the benefits of preserving our gamefish and fishing tourism. As far as tourism is concerned, ripping down mangroves and converting shoreline into hotels, malls and recreational parks are the priority. Our laws have had fishing regulations on size and species limits for years, just not enforced as was speed limits. Just look at what's taking place in Tobago.
