Local Carapichima ~ Manicou's

The collection of 6 Baby Opossums from a family in Carapichima who had found a mommy Opossum (who was named Manisha) with babies in their cat cage and they kept her together with the babies as pets, unfortunately the mother opposum passed away and the family weren't able to take care of all the babies.

We collected and looked after the children for a few days to make sure they were able to fend for themselves out in the wild.

We released these in a private estate where our friend Kyle would be the only person they would encounter

These three women are among the only remaining survivors of the citizens who voted in the first ever elections held in Trinidad in 1946.

They were guests of the TT Parliament which is celebrating 70 years of Universal Adult Suffrage in T&T with a display at the Waterfront lobby.

Local Dahee

Dahee should be Thick and Creamy, with a Pink Tinge.

This Pinkish Colour can be seen in the picture below, compared with the White Milk.

This Colour is achieved in the initial stages of making the Dahee, where the Milk is Heated in a Process called "Ultra- High Pasteurization" and the Milk Proteins are Physically Restructured.

It is a Measure of Quality, as Dahee that is more Brown in Colour was over boiled and may have a Burnt Taste.

People of Trinidad and Tobago ~ Sonnylal Samaroo

Mr. Sonnylal Samaroo, 96 year old Farmer, Strong and Active.

His fascinating story goes back to his birth in Brothers Road, Tabaquite, his wife and 6 children, and grand, great grand and great great grand children.

His eldest child is 80, an active barrister.

With his youngest son, Mr. Samaroo works a 52-acre parcel, reaping "Pig-Tail Buckets" of Pimento, Hot Peppers, and Carailee every couple days.

14 acres are dedicated to Dasheen.
