Have you noticed your lights brightening or dimming?

Sounds lke the engine block clogged with debri from old radiator.
Did you install a new radiator or foreign used?
Over heating can be caused if the cores in the fins are dirty/clogged.
Is the radiator fan coming on at intervals?
Are you loosing coolant?
Thermostat/thermostat sensor could be another issue.
bad water pump or impeller. pray is not that.

check for coolant leaks below engine block/driver side, listen for any grinding noise.
revving car at standstill to cause the temp to drop sayign your impellor or waterpump is not working as it should.
I could be wrong but you have exhausted alot on the list already.
when was last time you changed timing belt and waterpump?

Lol u used an old unit and making a comparison. When driving the fan won't need to generate as much air as air would be cooling the rad. When stand still u won't be getting air flow so fan would need to step in. Hence when u rev standing still water flows and will circulate quicker and you would see a diff. Target fan or controller presuming rad and engine are clean and the coolant temp sensor was replaced with a new one.

same thing i hinted to you dominick, alot of mechanics assume and dont take the time to test.
Since you in there you might as well change timing belt and pulley. not something you want to go and interfere with for a long time.
