you don't really need jumbo shrimp for this, more like medium
throw in some cracked crab too

btw to make stock
boil the rinsed heads/shells with some crushed garlic, halved onion,
celery ends, bay leaf, old carrot, salt, bp and strain it, suck the heads if you want

That stock gets amazingly red/orange from the shrimp pigment, always make it for flavoring my tagliatelle shrimp dishes and soups.

if looking to fry fish,
try frying bangamary fish
it is the top fish for frying, it is from guyana but you can get it in some of the meat shops
somehow it was never popular here but everywhere else in the caribbean it is popular.
the skin has no funky taste either.

i can never get the patty to be tender and succulent

is it that the minced meat is too lean and no fat in it?

Not always, i barely make chicken burgers but when i do, i add olive oil or eggs to the mix and most importantly, don't overcook.

Not sure what cuts of chicken you're using, X_Factor.

My gf, uses the "dark meat" cuts, plus the eggs/olive oil, help make the patties juicier. No complaints here.

Wanna try to make turkey patties soon.

Buy boneless skinless thighs in pricemart, and use a food processor to grind them. Add egg, garlic seasonings etc.

Another mistake most people make is to overcook chicken, in Trinidad we cook the damn chicken til it is dry and rubbery. Cook it till all the meat is cooked, and STOP.

You shall have thine juicy burgers.

bangamary is delicious .. I think its called catfish also ..

but trini's not too much into banga idk y na .. prob coz they like marlin and all those other big fishy's
