They can't do that. The honey will crystalize.
They feed the bees sugar water so the honey is made from that instead of flower nectar.

There is a difference in the taste but that would be imperceptible to most palates anyhow.
I have heard most apiarists resorting to sugar water becasue there is a significant shortage of flowers in Trinidad to satisfy the stock of bees due to weather and man made activities such as bush fires in the Northern Range particularly in the dry season.
