Tried jerk chicken today with a homemade seasoning blend. Turned out awesome. Nice char on the outside but still real tender inside.

I realizing the seasoning is what created some of it. I used a bunch of herbs and spices.

I have a bunch of wood for smoking to cut up this week

had to dump a couple buckets of guava the other day
I cut and put them in covered buckets, somehow maybe they werent properly dry and some kinda black fungus and worms take
over, literally turn black like tar and with a wet coating.

Also smoked some pineapple slices, coated them with a brown sugar and cinnamon mix and in the smoker for 20 minutes at 275, cut them up and added to some cubed tomatoes, cucumbers and corn, a lil salt and pepper and apple cider vinegar for a nice salad

Are those pork ribs or beef ribs? If beef, where do you get them?

Finely chop one medium red onion.

Finely chop about 8 cloves garlic.

4 medium salad tomatoes or 10 regular tomatoes.

Method.

Skin the tomatoes. Place in boiling water for a few mins and then in an ice bath. The skin will peel right out. Chop them up.

In a sauce pan, throw about 1/4 cup olive oil and throw onions and garlics. Bring to a simmer and let the onions and garlics sweat a lil bit. Add tomatoes and let that come to boil and then simmer. Depending on how juicy the tomatoes are, you may have to add some water. Add a piece of fresh thyme and fresh rosemary. Let that simmer. Salt and pepper to taste. Add some sugar to cut the acidity of the tomatoes. Add 1 teaspoon at a time. You don't want it too sweet. You can now take either a potato masher or immersion blender and do as you please with the sauce. Mines was with an immersion blender. Then let that bubble for a bit and you're done. Total cook time is about 25-30 mins.

Gonna make.some simple.bbq/ potato.salad/ fry rice just now.
I buy some grouper and carite this morning in carli bay so gonna prepare that one time for tomorrow....

I spend a few hours today making some cannabutter though. Gonna try making some brownies. Might die might not

Bet these foods cost 1/2 the cost and taste 100 times better

I tried it and its horrible... very yellow and loaded with colouring and strong urdi flavour. Bara come out hard too....
