SARS-CoV-2 can infect basically any mammal. Tiger, Dogs, Cats, Hippos, nearly any zoo mammal has had documented SARS-CoV2 infections.

Denmark is also one of the early seeding grounds for Omicron. Maybe it is related, maybe not. But the point is, even if we vaccinate every single human, eradicate COVID from the human race, there are still massive animal reservoirs that can and will produce exotic mutations that will circle back to humans.
