I used ECC for my down lights, but the main electrical was done with single single and conduit.

Single in conduit would be best for the option of replacement.

if you are using pvc conduit you will also have to run a ground wire . before with the metal conduit you were exempted from the ground wire because the metal conduit was the grounding link
so factor the ground wire in your cost also

All good advice here, op. Using conduit will let you add a circuit later if you need to. I would suggest adding an extra conduit in case you ever want to add ethernet, security or video cable.

Use conduit and run it to a 4x4 box with in a foot or so of the location that you plan to add a fixture to your ceiling. Drop ECC (with a bare copper earthing wire) so that you can fish it into the hole after the fixture is in place.

Some fixtures and switches can still be bought without an earthing wire but I suggest still having it next to all of your switches and fixtures.
