When buying honey in supermarkets look for bottles with Apiary Number. They can't afford to bottle sugar water cause you could report it to the Min. of Agri and they could lose their number.

Someone told me about the darker the color the more pure it is? i an not a pro in these things, but i still find the pure ones taste different from those at the supermarket

all them years of daily driving on that manzan road....if instead of drinking rum I could have bought a bottle or two of honey a day (back then was $40 a bottle) and stored them.....all now so I could have been gougin' out ppl eye!!!! *sigh*

didnt read all posts but you cant water down honey with sugar water, if you see crystals forming that is a normal crystallization process that can happen with honey. the colour and viscousity of honey is related to the type of flowers used. for instance when caroni used to cut cane and bees collected the ooze from the cut stems you get vey thick dark honey. nectar from citrus can give an almost clear thin honey (not watered!). mango can give a very mild reddish colour too
