Went up toco for the first time in 10 years. Tried the famous aunty kay seafood platter.
550 for one
It was great though.

Lobster shrimps crawfish muscles chip chip clam dumpling sweet potato corn

Made rice, dhal, bhaji and curry chicken for lunch. Leftovers would be lunch Monday /Tuesday.

Dinner:
Made salads and Mexican style chicken in the air fryer. Tossed some breast pieces in olive oil, jalapenos pickle juice, smoked paprika and El Paso taco seasoning. 12 mins at 400F, kept the inside moist and a slight crisp outside

Simple salad base:
Red oak lettuce, Muir, romaine, all shredded.
Cucumber, red onion, pickled jalapeño, red and yellow bell pepper, local sweet pepper.

Chopped the chicken, Crumbled a couple crunchy taco shells on the salad, light dressing with pan drippings and some Pricesmart vidalia onion dressing.

Salads made to cover evening meals for Monday and Tuesday too

i like muir, cant eat regular hard lettuce after that

Btw, I get these fancy lettuce $8-10 a head in Couva market. Muir a little more expensive because it almost triple the size. 12-15inch size for $12-14.

Yea I can’t go back to the hard local lettuce. Romaine crunchy but it not bad

nah, these days I going for big taste on a modes budget. air fryer is a real ace in the hole for quick prep for small families (2-3 ppl)

ah looking for ideas for tomorrow fellas.
What's something real nice allyuh eh eat on a Sunday for a lil while? Emphasis on the "real nice". Gimme sumn, ALL ideas welcome, including the upper and lower budget ones, and anything in between.

If nobody eh say nuttn is saltfish concrete with roasted chicken and garden salad with whatever kinda sauce I could concoct with minimal effort in dey meff tomorrow

i making a big pot of lamb neck
but using a vietnamese pho spice pack
super aromatic
might throw in some casareep too

Lil pachounie goat belly parata BBQ chicken tanduri chicken and some pepper wings Lil onion pepper cut up or some for drinks have 2 case ah cokes remain from eid so dah go done

Meal prep, it’s jasmine rice, stir fry beef, grilled chicken, broccoli and a salad. Snacks is papaya and watermelon.

after a couple weekends letting wife and kid choose menus of provisions, lentil and bake chicken; and then curry chicken, red beans and rice….


Tomorrow is my pick.

And i want fire dhal, rice, stew chicken and peppery pakchoi. Already have some killer kuchela to go with it

Last week was slow smoked lamb neck, veggie rice and steamed black beans in coconut milk on d side, and pineapple chow for salad.

I eh go lie tho
matix idea about jasmine rice with stir-fry beef sounding like a option. I cyah do the plain broccoli tho

fowl seasoned and split
doing a piece of cripsy pork too
along with some garlic egg fried rice

Couple weeks ago I curried a duck, but I hide away some breast pieces in the freezer to experiment with.

Today I Sliced them thin, drizzled olive oil, smoked paprika, oyster sauce and a 1/2 tsp honey.

Skewered them and 10min in air fryer.

Taste was sensational

duck skin crackling is a real thing
boil fatty skin in a pot with some water on very low heat til the fat liquifies and then it fries the skin like roast pork

Overnight marinated chicken thighs, seared and braised in chicken stock and fresh passata with potatoes, on low heat in the oven, with rice cooked in the braising liquid.
