Basmati rice, and dhal to follow with green salad.

Feeling to do a rum session this evening... have a Ron Abuelo 12 yr, El Dorado 15 yr and Captain Morgan. No styrofoam cups though

It's cast iron seasoning. It's not dirty. It's many years of a non-stick layer building up on a well used iron pot. Like the dull layer on an aluminium pot is the impermeable oxide layer which should not be scrubbed off to shine. A cast iron pot should be well seasoned at high heat and many polymerized oil layers before using anyway. A well seasoned iron pot or wok means higher temps when cooking which means a cook can accomplish wok hei which mean more flavor to the food.

El Socorro Rd almost opp unipet . Been there 60 yrs. Three generations. They make catchorie ,saheena and aloo pie and you get a cup of curry / stew mango with each purchase . People from all over come there.
