I once successfully rescued freezer burned minced chicken. (lost in freezer for 6-8 months)

Another time I tried to rescue freezer burned pork and that came out so terrible I regretted wasting meh good seasoning on it. (lost in freezer for over a year)

picked up some nice cuts of beef tenderloin gonna season a few pices for the grill today

meat needs to be marinated as in the beef cuts it isnt as flavorfull as say a t bone and the fat content is less....makes for healthier eating and is a softer meat when cooked

so i tested out the meat grinder and it works really nice!
i used 400g breast meat and 200g thigh meat to balance the flavour and texture and used the coarse plate which made the chunks about the size of 1/8 inch
added a little olive oil and 1 egg and allowed it to rest for about 30 mins( i seasoned the chunks before mincing )

cooked the patties in the frying pan for about 4mins a side

tasting time,
WOW, the were flavorful, most important super moist and tender!!
