It was great to finally be able to return to Our Lady of Guadalupe R.C. Church in Paramin once again, after a two year hiatus.
I joined hundreds of Trinis make the trek up to the Paramin Hills to join in the Celebrations and enjoy the very best of Trini Parang, Local Foods and Refreshment at the Paramin Cultural Organization's (PCO) annual Parang on D' Hill Festival, held at the grounds of Our Lady of Guadalupe R.C.Church.
This year, with the help of some really special friends, I was brought with me over 60 friends, bloggers and fans of Cuisine on the Corner to enjoy this remarkable occasion.
Event organizer Kurt Celestine and his colleagues of the PCO, allowed us the liberty of an almost front stage view of the Parranderos.
We gathered and partied till 3am, dancing and liming, enjoying Danzka Vodka TT, [yellow tail] Wine and Carib Beer.
The best of Paramin Foods was available, I saw my team enjoy Sweet Wild Meats, from Deer to Mannicou, Salt Pork to Cured Ham, Bake and Shark and Empanadas
