how come when ppl discussing sushi there is such evocation of personal opinion
"I only like so and so", "so have chefs from so and so" ?

You don't get that kinda response when you ask who have a good shrimp roti, doubles
or Chinese food etc.
Is it because sushi is the in stoush thing now ?

because it takes a certain level of skill to make good sushi consistently.

theres are hundreds of chinese restaurants, doubles men and roti shops in Trinidad

maybe 20 sushi places if soo much? and 5 of them good to eat from?

The only thing that makes good sushi is good rice, aged fish and vinegar- a good chef adds his signature in creativity and flavours but, it's ridiculously simple to do. Nigiri requires a bit of extra finesse in slicing fish, but that can be learnt in 5 mins with a filet. Other than that, some fancy hand flourishes and you're good lol. At the heart of sushi, is an attempt to prevent fish spoilage and hunger.

the best sushi chefs in the world say differently
Japanese Prime Minister Shinzo Abe welcomed President Barack Obama to Tokyo Wednesday by taking him to the greatest sushi restaurant in the world, the three Michelin star Sukiyabashi Jiro.

The unassuming restaurant is located in the basement of an office building off a subway station and seats just 10 people at a time at a long bar. It is owned and operated by Jiro Ono, who turns 90 next year, who has been learning and perfecting the art of sushi since the age of nine, with Jiro’s eldest son, Yoshikazu Ono, pitching in. Their restaurant was popularized by Anthony Bourdain’s television show No Reservations, and gained mythical status after the 2011 release David Gelb’s documentary film Jiro Dreams of Sushi.

What makes this sushi so good? First off, the ingredients. Each morning Yoshikazu bikes to the Tsukiji fish market to select fish and seafood to his and his father’s exacting standards. In the film, the restaurant’s tuna dealer (they have a prefered vendor for each seafood variety) scoffs at an array of beautiful tuna, “People say there is good quality here today—there is nothing good here today.” Jiro has his own special rice vinegar for the sushi rice. “It has good body and is both mild and sharp,” the restaurant website explains. “Although its degree of vinegar is high, it does not have that pungent smell of vinegar. This is the perfect rice vinegar for sushi.”

Next, there’s the technique. Jiro’s apprentices train for at least ten years, and don’t slice anything until they first learn how to hold the fish. In the film, Jiro explains how he came to prepare the perfect octopus, saying his apprentices used to massage it for 30 minutes before cooking it. Now, it’s massaged for 45 minutes. The seaweed is hand-toasted over charcoals. Jiro or Yoshikazu hand-form each individual dish, applying just the right amount of soy sauce or salt to bring the seafood closer to perfection.

Jiro has spent decades mastering the proper temperature to serve sushi. The rice is maintained at body temperature, while the toppings are kept different ideal temperatures for the specific preparation. The seafood itself could be marinated or aged for days depending on the specific fish to meet Jiro’s standards.

Finally, the experience. While Obama and Abe were in the restaurant for 90 minutes, the average Jiro meal last little more than 20 minutes. Immediately after each bite-sized dish is consumed, the next is placed on the wiped-down plate. The sushi is eaten with your hands, and there’s no additional soy sauce or wasabi to apply. It’s perfection, as determined by Jiro.

Jiro as with any top notch dining is about a culinary experience, its much more than the food. Its the aspects of preparation, dedication, ambience and most of all, trust. If you're looking for a good tasting morsel, with the right ingredients, you can create it yourself. I've seen the terrible work ethic and ignorance of fish handling by vino chefs first hand.

The supplier for most of em is hardcore. There's also that place in trincity and some cuisine shops that stock rolling mats, sushi kits. I just get it off amazon, rose rice and aged rice vinegar. Rest I can get myself locally.

yeah, most of them using the same ingredients from the same suppliers,
kinda like the gyro men who all using the same gyro cones.

sushi is more "assembling" the most important part is cooking rice right texture and
the vinegaring

for the local palate it don't matter as most soaking it down in soy sauce ala ketchup/garlic on pizza crew, just like all wild meat does taste good as it curry stew with plenty pepper and coconut milk
even a piece of truck tire will taste good so, lol

As most commented already sushi is a break down of quality over quantity.
Short grain rice proper texture in a rice cooker*(rice cooker is a must) season with seaweed while cooking.
Cool then add rice wine vinegar.
Always keep rice moist.
Sauces. Soy /mayo/eel sauce / sriracha /garlic / etc.
Avacado *depends on preference.
Quality of salmon/tuna/butterfish/eel/tomago/pickled radish/ etc (how fresh /type of salmon/tuna/etc)
Then some may want a crunch ; so frying of rolls or even adding cucumber.
Personally prefer a balanced roll as opposed to a large roll with plenty rice and little "meat"

If you go to Malabar Farms gourmet outlet in Maraval Road, you can get a lot of the prep ingredients. I'm sure they also have the sushi fish already filleted too.

Kaizan, Eurasia, More Vino, Levels, Sushi Express in that order for me. Btw Levels close down right? Yet to try Samurai

Never had Hyatt...how do the prices compare?

Hyatt its somewhat more costly, rolls are smaller, but it tastes really really good.,

Service in Mor vino north and south leaves a lot to be desired.

These days I find Kaizan in PP is pretty good.

The marriott in georgetown have decent sushi too.
