the all claim to have proof, however they can't seem to say what makes one set of "proof" true and the other false. i.e. what makes Christianity's proof true and Islam's proof false or vice versa?

If we can claim things are real without empirical evidence then we might as well say that leprechauns and unicorns absolutely exist without question.

When they "now" get the proof that the particular thing exist and had always existed...
It is then known as a "fact".

So even during the period where the people had no evidence of this particular existence it is still accepted since they "now" have the proof.

So it is unfair to say that a particular religion does not exist rather it should be said that the “proof” of the particular existence not yet known.
Also the “evidence” to prove the Non-existence of a religion also does not exist.

So...
“proof” of existence... not known
“proof of non-existence”... not known

Why is good considered to be good and bad / evil considered to be what it is? Who defines these concepts and who is qualified to do so?

Does anyone have empirical evidence aka proof that good is good and evil is evil?

no, because what is good for one person can be considered evil for another.

at one time slavery was considered acceptable.
at one time people traded their daughter for grains, sheep and cattle.
today some people feel same sex marriage is acceptable while others don't.

No, it is said that there is no proof to substantiate it's existence.
Take warp drive for instance. Scientists say that they have not discovered anything that can move or make an object move that fast. Up until the other day they found nothing that can move faster than the speed of light. In the scientific community they keep an open mind to things. Religion is on file and being monitored, trust me.
Needless to say if there's a recorded case of divine intervention and no way to refute it, scientists will pick whatever fate and follow.

So what if... when you die and get to heaven you discover Satan has won that constant war between good and evil presented in your holy books. We haven't heard from heaven since that tribal pedophile druggie took a magic ride on a flying equine wonder or since those golden plates that no one else ever saw in Utah incident at least. So really the truth is that we don't know whats going on up there and there is very much a possibility that God had either retreated or died in that great war.

1. There's no war. Well maybe only in christian delusion. Allah / GOD is in full command of all affairs, beings, etc including satan. There's no full gods, half-gods, son-of-god, etc as described in Greek mythology.

Secondly, my view (faith) is that I (my soul) will continue to exist in another realm until the day of judgement, then it will be hellfire or paradise forever. may Allah make the former haraam for me and grant me the latter, ameen.

No one can prove or disprove what will occur but if the reality of what lies beyond death is what believers say, then woe be unto you all!! If the reality is what you all say then no big thing...

Hey, I took the liberty to correct my statement above.

The reality exists to me / believers but the proof does not. That does not mean that the reality does not exist. As they say, "THE PROOF IS IN THE PUDDING!": When we die we shall find out....
