Does this device require a Chromecast device to play music off YouTube or other music sites ?

Turn off location and use a proxy that's what I did to my google home mini and nest products

It will work with chrome cast as well

I have three speakers and one display

well yeah there's always a VPN to make things work outside USA. Put the VPN settings in your router.
