I did a great foods boneless picnic last friday, came out pretty good
A good digital thermometer is a must to know when done

Otherwise it begins to hit dry territory, same with boneless turkey breast.

The good thing is the trend now is towards smalled sized hams and turkeys
Easier to cook evenly and less risk over overcooking.

gonna brine a turkey today for smoking Christmas Eve, unfortunately it's a 14lb so it'll be in for a while

the erin farms picnic taste a lot better than the great foods - or maybe i just got a bad one.

There's an imported canadian ham, can't remember the name - they taste great but they are HUGE AF. takes like 10-12 hours to bake.

My ham method is using deep metal dish, completely covered in foil and cooking low and slow. If I'm supposed to run it at 4 hours at 375, I do 345 for 5h instead. Keeps it ridiculously moist.

Dont care for cloves nor glaze. It keeps better without either.

put my back into it today for customers:
2 bott eggnog
15 bott ponche creme
6 bott cafe ponche creme
8 bott hazelnut ponche creme
way too many banana breads, coconut sweetbreads, spice carrot loafs, spiced pumpkin loafs, foccacia bread, cobblestone bread and of course reg whole and white bread. Also pork, fish,soya, beef and chicken pastels. Still have a sorrel reduction and cheese cake to do, too busy for detailed pics off to deliver now:

Looking for a caterer for a one year prayers. Indian food.

Where the food tasting good, a reasonable price and the caterers clean.

Not a big prayers about 40 people max.

Any recommendations?

Did a Pan de Jamon as I was visiting some friends, made an extra one but have yet to eat it all...came out surprisingly well seeing my oven nobs no longer has temperture markings :(
