one thing I always keep in mind is to make sure the horizon is level
My point-and-shoot has a mode that breaks up the screen into a 9 box grid, which helps in lining it up
the 9-box-grid system also helps in the placement of your subject within the shot

Nice zoo pics Aron.....i took a few a while aback , was with alotta ppl and always on the move so i didnt have much time to adjust for every shot which is why some are a bit overexposed ...its such a pain to have to deal with very low light in some cages and then way too much light in other enclosures...i used the new tamron 70-300 VC....
its a solid lens , great results even at full zoom...

many simple point and shoot cameras have preset colour profiles..
but i'm sure some post processing is done as well..

MG Man, to be honest i bumped up the saturation setting thats why my colours are so bold and then I used the program aperture to enhance shadows etc. I am no professional, only have my camera 2 weeks.

The Nikon D200 I use is actually set at "neutral" as default.
I think Nikon's intent was that the photographer should decide how much vividness and saturation he wants during post-production, and not the camera.

I use a combination of Photoshop CS4 and Lightroom 2.0 (too lazy to upgrade).

If anyone of you guys has some experience with Photoshop CS4 and layers, here's an excellent tutorial on how to get very vivid yet mostly natural colours out of your photos.

I just tried it in CS4 and this is what I got:

Apparently the only way to capture the true awesomenessness (so they say) of a Nikon is with a Canon, so I shot it with a 5DMKII and a 70-200 f/2.8L IS II

thelem, You can check out UWI Open Campus.
They have a certificate course. It's an excellent course and it only costs around $700 for 20wks.

I think the new courses start in a couple weeks.
