What brand of almond flour did you use with the macaroons? Saw a new one at PS but haven't tried it yet ( sorry for all the questions but baking is my thing)

Used Red Mills Almond Flour. And nah ask away I don't mind.

The correct name is macaron, not macaroon, diff product.

Red mills expensive compared to the ps one.
Once upon a time I used to make those to sell to a shop. Plenty work to make them.
I used Italian meringue method, more reliable, but I gather most folks nowadays use a recipe loaded with plenty sugar to Get the skin to form easy.

you need a good digital scale, I use a regular kitchen digital scale and one of the small ganga ones for the smaller quantities.

I do at least an overnight cold rise in fridge, so not much yeast

one 400g dough ball
bakers flour - 245g
cold water - 145g
instant yeast - 2g
salt - 4g
oil - 7g
sugar - 2.5g

dissolve the water, sugar, salt, idy first then oil then flour
mix at slow speed until just barely smooth, doesnt have to be very smooth.
ball it up and put in an oiled plastic container covered in fridge overnight,
should expand a bit by next day and take out at least 45mins before use to bring up to room temp.

Crab and dumpling
For the vegetarians dhalpuri and peas and paneer. Had the dhalpuri with the crab though.

Some left over BBQ chicken from yesterday as well.
