The voltage will drop when you put on the A/C because their is a load. The additional load would require the engine to work harder therefore more heat

I'm not sure if it's the same with you. But when I switch my a/c on under normal conditions the temperature tends to drops owning to the fan activation. This usually counters the additional load.
Seeing a voltage drop is however normal.
OP did you check to see if the fans are switching on when you put on the a/c?

Have your battery checked . and your radiator . if it has poor circulation this would contribute to your overheating prob . and for voltage if your battery isn't good your alternator would receive a resistance voltage which would cause a low charge .try using another battery and if this don't work then check your ground(-) wire .this would also cause a low voltage

adding to this make sure your battery poles are tight

Research load response control, I think that could be why...

Where did you get the voltage from? Inside the car (voltage meter) or using a multimeter on the battery to get the figures?
What size radiator ...3 core?
Which fans? correct fans?
As for the response of switching battery, just simply disconnect the battery and use a multimeter to get figures..

has the temperature ever gone up after driving the vehicle above 3000rpm for a while and then coming to a stop?
