Did you do a cooling system pressure test to ensure that you have no leaks?
Did you do a leakdown test to ensure that your head gasket is not compromised / identify if head is warped?
Is your fan turning on normally? Check the thermo-switch - you can even bridge the connector to run the fan direct for a few days to see if it helps. If so - then the thermo/fan-switch needs replacing

The thermostat is a replacement part. It is to be replaced every 100,000km. A sticking thermostat will cause you to overheat. A leak-down test will only indicate the condition/sealing ability of ur rings & pistons. remove the thermostat, see if the problem is alleviated, if the over-heating stops, install a NEW thermostat.

check the fan speed, thermostat and make sure the air was bled from the head sfter the job,cuz that could help with the head heating up because of the amount of air in the head

is the car really overheating or is your dash gauge saying that?

real overheating = when u stop after a long run, u hear ur overflow bottle bubbling.
dash gauge malfunction = sudden or rapid increases and possibly decreases in temp reading. can change with voltage.. eg - rev and it changes, turn your lights on and it changes.

you should post this in the honda forum. i had this problem and it was actually the dash gauge. BUT it was not the gauge itself but rather, the sending unit on the engine block. there are two 'temperature sensors' on your motor. one controls the fan while the other send info to the dash. hth.
