A large enough explosion creates a super high temperature at the center of the explosion. This creates a blast velocity which leads to an instability between the shock front and the air just behind it (Rayleigh-Taylor), causing a collapse with tremendous velocity and sucking the winds back in which continues to rise at the center due to convection. That creates a mushroom cloud. And why you get hurricane winds with an atomic bomb which is many times larger than any conventional explosives reaction. The actual core of an atomic bomb explosion at t= (10^-6) reaches the temperature of the center of the sun (10 M °C) for a fraction of a second.
Very large ammo dump explosions also create mushroom clouds. Large volcanic explosions also create a mushroom cloud like an atomic bomb, a famous photographed example is Mt. Redoubt in 1990.
Interesting note: If you can't cover such an explosion with your thumb it means you're too close to the blast and will suffer consequences. That is that the Vault Boy is doing in the Bethesda's Fallout video game series, not giving us a cheerful thumbs up.
