Seeing this making the rounds in Reddit. Good reviews by the people there who bought it. It's a gas fired small oven with a baking tile to give authentic results.

And like doubles bara, the secret is in proofing the dough. He said room temp for 24 hours.

I don't make pizza enough to warrant that, but I trying proof times.
Knead and transfer to greased bowl covered with plastic wrap and sprinkled with oil
let rise at room temp for 2 hr.
Fridge for 12-14hr
Room temp for about another 4.

Then batch, hand flatten and pull (no more knead, no rolling pin)
Getting nice results

long cold rise is the trick for any good tasting yeasted dough.

I did not know about the long cold rise.

Re pizza sprinkle some cornmeal on the Bedford the dish before placing dough, it give the pizza a crispy texture.I bake in both round pizza tray and on a large ceramic tile. The dough needs to be pierced many times with fork to avoid raising in the oven. It's easier to make a circular pizza than a square in my very limited experience. But with the tile it more like a make what shape you want within what would fit of course.

To cold rise overnight in fridge you need to reduce amount of yeast or it will overrise, try half
you won’t have the yeasty doughy taste in the final product.

the cornmeal thing also works to slide of any baking dish.
I don't have a tile or stone.
I use pyrex, or roasting trays lol

got a nice rack of fresh looking local pork ribs by hilo chaguanas yesterday , was "only" $100 for 8 ribs each about d size of a hand

i seasoned it up , put it in d freezer & later mid wk i gonna bake it along with some potato wedges ...

Be careful with those... They dry out very quickly

Don't waste your time going there.
Reached 9am. 50 ppl. No park, it's a residential area, not an outlying farm. He not taking any more orders for the day. Place smelling ferking stink so you really can't stand in the area. Sorry for his neighbours.

Bought a 7 pound for $160 at my regular place.

Been getting a lot of fresh mangoes recently. Decided to do a mango pineapple smoothie using a magic bullet I have a long time now but never use. Amazing how little effort and how little fruit and juice you need to make those chillers. It predominantly ice.
