learning how to cook, love using d crock pot, i made a bess black eye peas last week, jus put all d ingredients in & go sleep, wake up d next morning & eat

i guessing u boil d corn then curry it after or curry it jes so ? ...

Peel, dice and boil potatoes (salt your boiling water)
When the potatoes are soft you’re going to drain them and add your flavourings. I usually put:
Butter, Grated cheese, sour cream, paprika, fresh chopped chives, celery and parsley, pimentos, grated garlic/garlic powder, finely chopped onion/onion powder, tobasco sauce or your favourite hot sauce . (You can add pretty much anything , tasting and adjusting to suit your palate)

Mash your potatoes to an almost smooth texture and ensure that it’s moist. If it’s a bit dry you can add some more sour cream or some milk. (You don’t want your mixture too soft as you need to form them into balls)
After mashing add your tuna (I use chunks), mixing with a spoon to slightly break up the tuna and distribute it through the potato mixture.

Prepare a well-seasoned egg batter and a bread crumb station. (I used a mixture of bread crumbs and crix that I broke up in the food processor) The crix gives a nice crunchy coat.
Roll your potato into any size ball you want. (I use an ice-cream scoop to get a consistent size.)
Dip in the egg then roll in the crumbs. Place the balls on a baking sheet lined with wax paper, set your oven to 350 degrees and bake them for about 20 mins or until golden brown.

What if you don't eat tuna? Can you just replace it with minced or shredded chicken?

Yes you can. You can replace the tuna with any cooked shredded meat.
For vegetarians I simply use a mixture of green peas, corn, finely diced carrots and celery. I would steam my vegetables a little to make them tender as they won't soften much during the baking process.

Oh and on the vegetarian/vegan note. To replace the egg batter you can make a mixture of soy milk, vinegar and flax meal. I usually use a coffee grinder to pulverize my flax seeds or I use chia seeds as well.
You have to let that mixture stand for about 10 mins to thicken.

1 egg replaced =
1 tablespoon chia meal or flax meal (seeds that have been ground)
2 tablespoons water
1 tablespoon vinegar

Instructions
Whisk meal, vinegar and water together and let stand 5-10 minutes until thick, gelatinous and gloppy.
